OS&E (Operating Supplies & Equipment)
The consumable operating items of a hotel — linen, glassware, crockery, uniforms. Expensed rather than capitalised, tracked at par level, and NOT a fixed-asset register item.
Put ten thousand glasses on the fixed-asset register and you have not been rigorous. You have made the register unusable, and you have distorted your depreciation while doing it. OS&E belongs in a par-stock system, counted and replenished.
The error runs the other way too, and it is the more expensive one: capitalisable FF&E expensed as a supply never appears on the register, never gets depreciated, never gets insured properly, and never gets replaced on plan.
